Molasses is made from pure sugar cane juice, boiled down as you would for maple syrup. The length of time boiling and evaporating determines the grade - light, medium or "Blackstrap." Blackstrap molasses contains the most concentrated percentage of essential minerals, B vitamins and iron, and is thus used as a tonic for anemia and a wide range of other deficiency issues (or gingerbread!). The taste, however, is very strong.

Also good for baking, and sometimes preferable in taste as a mild tonic, is medium grade.
